It is thanks to the 100% official and accurate national calendar account I follow on Twitter (@NationalDayCal) that I know that today (January 27th) is National Chocolate Cake Day! In celebration, I baked chocolate cake cookies to take to work today.
After discovering the box of chocolate cake mix my aunt gave me over the holiday break, I searched for "chocolate cake mix recipe" and found this recipe to make chocolate cookies with a box of cake mix. The draw to this recipe? Only four ingredients. So easy. Yes, please!
I threw together the ingredients [1box of chocolate cake mix, 2 eggs, 1/2 cup oil, and 1 teaspoon vanilla] and mixed well. I rolled them in powdered sugar (okay, I lied... 5 ingredients!) and baked them on a parchment-lined cookie sheet at 350 for 10 minutes. The cookies turned out moist and cakey. So good!
