The baking bug bit me again last Friday. While I was perusing Pinterest, I saw lots of Easter-themed sugar cookies and knew I wanted to make some. First, I had to find a good sugar cookie recipe to make cut-out shapes. I've tried making sugar cookies in the past, but hadn't made a recipe yet where the cookies didn't spread in the oven and mess up the intended shapes.
I found a recipe on Pinterest that promised "no-spread" dough and I took a shot. The recipe was actually to make chocolate sugar cookies, which I thought sounded pretty good. I ended up making a batch of chocolate and plain sugar cookies.
The recipe is really easy to make and they turned out really good! The chocolate ones taste especially good with milk!
Chocolate Sugar Cookies
1 stick unsalted butter, cut into small cubes, room temperature
1 tablespoon light olive oil or canola oil
1/2 cup sugar
1 tsp vanilla extract
1/2 teaspoon salt
1 egg
1/4 cup corn starch
1/2 cup unsweetened cocoa powder (leave out for non-chocolate sugar cookies)
1 & 1/2 cup all purpose flour
Instructions
1. In a large bowl or stand mixer, cream together butter cubes, oil, sugar, and vanilla until smooth.
2. Add egg and mix until just incorporated.
3. Add cornstarch and cocoa powder. Mix until just incorporated.
4. Add flour and mix. Dough will be in large, crumbly chunks.
5. Spoon dough between two pieces of parchment paper and use rolling pin to roll dough out to 1/4 inch thickness.
6. Use cookie cutter to cut out desired shapes and place dough cut-outs onto parchment paper or Silpat-lined cookie sheet.
7. Cook at 375 degrees for 9-10 minutes.
Make sure the cookies are completely cooled before decorating. I used this icing recipe with different food coloring to finish off my cookies.
